Roasted sausage and potato !

Good morning everyone !

You won't usually find recipes on my blog but I thought I'd share this one because it's just so delicious and so quick and easy to boot !


John says - I hope you're not going to start taking photos of everything we put in our mouth.
Suzan says - It'll only take a moment - sheesh !
John says - Why don't you paint a dresser or something ?

OK - this is how easy it is
Place chopped potatoes in a bag in the sink ( it really helps contain the mess )


and mix them with whatever herbs and spices you normally use
I used garlic - oregano - basil - salt and pepper - chile peppers and a little steak spice and olive oil


and squish the bag all together until everything is evenly distributed ( I could eat these as a meal with nothing else )


place them in a pan


I used Arrabiatta sausages but any will do


I boiled them first to remove some of the fat................and then cut them into bite sized pieces



Mix them into the roasting pan with the potatoes with a diced onion and  .................


Until it looks like this



and roast for 1 hour on 350.................


Promise you - it's delicious !!!

  3. That looks really good. I will have to try it when I can start eating potatoes again. I am watching my carbs and haven't had a potato in 6 months.

  5. Oh yum! I need to try that! I don't know if I can find tomatoes like those though...I'll have to look.
    Aw, lucky you to get an Evan weekend. I know you'll enjoy it. I'm going to Canton with my twin sis...we are celebrating our birthday a week early. :)

    1. You know Patty - all the years I've been making this I NEVER once thought to use leftovers for breakfast - omg - I have to try it - I'm sure it'll be delicious with scrambled eggs mixed in there !

  10. Looking Good and can't get much easier than that. Have done something like this before but I did boil my potatoes for about 5 minutes first; helps shorten the roasting time.

  12. MMMMMM! Looks yummy ! We make a different version of this. And I do it on top of the stove. I don't put all the herbs on the potatoes, but maybe I should start. We use a Hatch green chile sausage that came on the market last year. It's SO good! I also add bell peppers, which hubby doesn't care for, but I like. After putting onto our plate, we add shredded cheddar cheese for a little extra extra yummi-ness.

  15. Wow, Suzan, that looks so good! I pinned the recipe to my FOOD Pinterest board! Are you on Pinterest? I doubt it--you are a DO-ER, it seems to me. You keep yourself too busy! I love potatoes and anything, but this combo sure looks good! My husband would love it too. BTW, from now on I'm going to call my husband John number 2 because your John's antics remind me of my John no. 2's antics and conversations you describe. Only I don't think your John can hold a candle to mine! The stuff mine comes up with is just unbelievable! His middle name really IS John anyway! Rightly named, I'd say, N'est-ce pas? I call him Ricky Ricardo too cuz I Lucy him to death!
